Sprouted Millet and Nuts Cookies Recipe

Ingredients

Sprouted Ragi / Finger Millet / Kezhvaragu  –  3 tbsp
Sprouted Pearl Millet / Kambu – 3 tbsp
Wheat / Kothumai – 2 tbsp
Blanched Almonds / Badam Paruppu – 1 tbsp
Pistachio or Pista – 1 tbsp
Walnuts – 1 tbsp
Peanuts / Groundnuts / Verkadalai – 1 tbsp
Cashew Nuts / Munthiri Paruppu – 1 tbsp
Gram Dal / Pottukadalai or Porikadalai – 1 tbsp

Palm Jaggery / Karupatti – 1/2 cup ( powdered )
Ghee / Clarified Butter –   1/4 Cup
How to make Sprouted Millet & Nuts Cookies recipe with step by step photos
1. Pre-heat the oven at 160°C/320°F for 10 minutes or as per your oven’s required pre-heating temperature.

2. Take powdered palm jaggery in a pan.

3. Add some water to the powdered palm jaggery to melt and filter the syrup. Heat it over the low flame.

4. Wait until all the palm jaggery gets dissolved & melted completely.

5. Once it is melted completely, filter the jaggery syrup using a sieve.

6. Take homemade cerelac powder in a bowl.
If you are not having nuts & sprouted millet powder, follow the below steps or else you can skip this step.
  • dry roast all the ingredients one by one given under the ingredients list.
  • Take roasted nuts and millet into the mixer jar or food processor one by one and grind to a fine powder at regular intervals.
  • Do not grind the powder continuously as the nuts will start to leave the oil.

7. Add ghee into the cerelac powder .

8. Add filtered jaggery syrup to the powder. Mix it well.

9. Mix the dough gently.Do not knead the dough. It should be come together and hold easily. If the mixture becomes dry add some more ghee or if the dough is sticky add some more flour and mix it gently.

10. Using a rolling-pin, roll the dough about half an inch thick.

11. Take cookie cutters, cut the dough as per your desired shape.



12. Place all the cookies on a greased baking pan and bake it for about 20 to 25 minutes or until the cookies cooked well. The cookies cooking time may vary depends on the size and thickness of the cookies.So keep checking after 20 minutes otherwise it will get burnt.
How to make Sprouted Millet & Nuts Cookies Recipe in a pressure cooker
1. Take a stainless steel bowl, wrap it with an aluminum foil and place the cookies in that bowl.

2. Take an unused or old pressure cooker or any other wide vessel and fill it with sand at the bottom of the cooker. Pre-heat the cooker until the cooker gets heated well over a high flame.
Place cookies bowl inside the cooker over the sand base. Remove the gasket from the pressure cooker lid and close it. Turn on the flame from high to low.It will take about 15 to 20 minutes for the cookies to get cooked well. Keep checking after 10 minutes.It may vary depends on the size and thickness of the cookies.
Once it is done, remove the bowl from the cooker and let them allow to cool completely. Store them in an air tight container.
